Ingredients

  • 12 large eggs (preferably 1–2 weeks old for easier peeling)
  • 1/2 cup mayonnaise (such as Duke's or Hellmann's)
  • 1 1/2 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1 tbsp sweet pickle relish (optional)
  • 1/4 tsp Tabasco or hot sauce
  • 1/2 tsp kosher salt & 1/4 tsp white pepper
  • Smoked paprika and fresh snipped chives for garnish

Steam and hard-cook eggs

Bring 1 inch of water to a rolling boil in a pot with a steamer basket. Lower eggs gently into basket, cover tightly, and steam over medium-high heat for exactly 13 minutes.

Ice bath and peel

Immediately transfer eggs into a bowl of ice water for 10 minutes. Crack shells all over and peel under cool running water.

Whip the yolks

Slice eggs in half lengthwise. Pop yolks into a bowl. Mash yolks with a fork until powdery, then whisk in mayonnaise, Dijon, vinegar, salt, and pepper until completely smooth.

Pipe and garnish

Pipe yolk mixture back into egg white cavities. Dust with smoked paprika and sprinkle with fresh chives. Chill before serving.
