The 3-Ingredient No-Bake Cookies I Make Every Easter
Also known as stained glass cookies or cathedral cookies: melted semi-sweet chocolate and butter tossed with fruity pastel-colored mini marshmallows and walnuts, rolled into logs and sliced into colorful jewel-like rounds. Difficulty: Super Easy.
Ingredients
- 1 bag (12 oz) semi-sweet chocolate chips & 1/2 cup (1 stick) unsalted butter
- 1 bag (10.5 oz) pastel multicolored mini marshmallows
- 1 cup chopped walnuts or shredded coconut for rolling
Directions
Melt chocolate and cool slightly
Melt chocolate chips and butter together over low heat until smooth. Let cool 10 minutes so marshmallows don't melt.
Fold marshmallows and roll logs
Fold in colored marshmallows. Divide onto two sheets of wax paper; roll into logs and coat with nuts.
Chill and slice
Refrigerate for 3 hours until completely firm. Slice into 1/2-inch stained glass wheels.
π‘ CHEF'S PRO TIPS
- Make sure the melted chocolate has cooled to lukewarm before adding the marshmallows so they retain their shapes.
