Crispy Chilaquiles Rojos with Fried Eggs and Cotija
Mexico's most beloved morning comfort food: thick tortilla chips simmered in roasted guajillo and tomato salsa until tender yet still crisp, topped with fried eggs, avocado, and crumbled cotija. Difficulty: Easy.
Ingredients
- 8 cups sturdy thick-cut corn tortilla chips (totopos)
- 2 cups roasted red salsa or salsa roja
- 1/2 cup chicken or vegetable broth
- 4 large eggs, fried sunny-side-up
- 1/2 cup crumbled cotija cheese & 1/4 cup Mexican crema
- 1 avocado, diced & fresh cilantro & pickled red onions
Directions
Simmer salsa roja
In a wide skillet, bring salsa and broth to a brisk simmer for 3 mins.
Toss chips briefly
Add tortilla chips; toss 1β2 minutes until coated and slightly softened while retaining crunch.
Garnish and serve
Top with fried eggs, cotija cheese, crema drizzle, avocado cubes, and cilantro.
