Low-Carb Cheesy Bacon & Broccoli Egg Muffins
A Starbucks egg bite alternative made at home: whisked eggs, sour cream, and sharp cheddar baked in a muffin tin with crispy bacon and tender broccoli florets. Low in carbs, high in protein. Difficulty: Easy.
Ingredients
- 8 large eggs & 1/4 cup milk or sour cream
- 6 strips bacon, cooked crisp and crumbled
- 1 cup finely chopped steamed broccoli florets
- 1 cup sharp cheddar cheese, shredded
- 1/2 tsp garlic powder & 1/4 tsp salt & black pepper
Directions
Whisk egg base
In a bowl, whisk eggs, sour cream, garlic powder, salt, and pepper until uniform.
Distribute fillings
Divide crumbled bacon, broccoli, and cheese evenly among 12 greased muffin cups. Pour egg mixture over fillings.
Bake until puffed
Bake at 350Β°F (175Β°C) for 18β20 minutes until puffed and set in center.
