This 9x9 Butterscotch Pudding Cake Is Pure Comfort
A classic self-saucing pudding cake: pour boiling brown sugar syrup over simple cake batter, and as it bakes, the cake rises to the top while a thick, molten butterscotch sauce forms underneath. Difficulty: Easy.
Ingredients
- 1 1/4 cups all-purpose flour & 1/2 cup sugar & 1 1/2 tsp baking powder
- 1/2 cup milk & 3 tbsp melted butter & 1 tsp vanilla
- Topping: 3/4 cup brown sugar, 1/4 cup butterscotch pudding mix, 1 1/4 cups boiling water
- Powdered sugar for dusting
Directions
Spread batter in pan
Whisk flour, sugar, baking powder, milk, butter, and vanilla into a thick batter. Spread into buttered 9x9 pan.
Sprinkle sugar and pour hot water
Sprinkle brown sugar and butterscotch mix evenly over batter. Gently pour boiling water over top (do not stir!).
Bake until cake floats
Bake at 350Β°F (175Β°C) for 35β40 minutes until cake is puffed and golden. Dust with powdered sugar.
