Skillet Blueberry Baked Oatmeal with Maple Pecans
A comforting weekend breakfast that smells like freshly baked blueberry muffins. Rolled oats baked in a cast-iron skillet with whole milk, eggs, vanilla, and sweet berries under a crunchy pecan topping. Difficulty: Easy.
Ingredients
- 2 cups rolled old-fashioned oats
- 1/2 cup chopped pecans & 1 tsp ground cinnamon
- 1 tsp baking powder & 1/2 tsp kosher salt
- 1 3/4 cups milk & 1/3 cup pure maple syrup & 2 large eggs
- 2 tbsp melted butter & 1 tsp vanilla extract
- 1 1/2 cups fresh blueberries
Directions
Toss dry ingredients in skillet
In a buttered 10-inch skillet, combine oats, half the pecans, cinnamon, baking powder, and salt.
Pour custard and berries
Whisk milk, syrup, eggs, melted butter, and vanilla. Pour over oats. Scatter blueberries and remaining pecans over top.
Bake until set
Bake at 375Β°F (190Β°C) for 30β35 minutes until golden and center is firm to the touch.
