Overnight Banana Walnut Baked French Toast

All the flavor of banana bread meets the custard richness of French toast. Thick slices of brioche soak overnight in spiced egg custard, then bake with brown sugar, sliced bananas, and crunchy chopped walnuts. Difficulty: Easy.

Ingredients

  • 1 loaf brioche or challah bread, cut into 1-inch slices
  • 6 large eggs & 1 1/2 cups whole milk & 1/2 cup heavy cream
  • 1/3 cup brown sugar & 2 tsp cinnamon & 1 tbsp vanilla
  • 3 ripe bananas, sliced & 3/4 cup chopped walnuts
  • Maple syrup and powdered sugar for serving

Directions

Arrange bread and bananas

Arrange bread slices in an overlapping pattern in buttered 9x13 dish. Tuck banana slices between bread.

Pour custard and chill

Whisk eggs, milk, cream, brown sugar, cinnamon, and vanilla. Pour evenly over bread. Chill at least 2 hours or overnight.

Top with walnuts and bake

Scatter walnuts over top. Bake at 350Β°F (175Β°C) for 35–40 minutes until puffed and golden brown.
