Ingredients

  • 16 large Medjool dates, pitted
  • 4 oz creamy goat cheese or blue cheese
  • 16 whole roasted almonds (optional, for crunch)
  • 8 slices center-cut bacon, cut in half crosswise (16 short strips)
  • Toothpicks soaked in water for 15 minutes
  • 1 tbsp pure maple syrup for brushing (optional)

Directions

Stuff the dates

Make a slit lengthwise in each date. Stuff each cavity with about 1 teaspoon of goat cheese and press a roasted almond into the center.

Wrap with bacon

Wrap a half-strip of bacon snugly around each stuffed date, overlapping the ends. Secure with a soaked toothpick.

Bake on a rack

Preheat oven to 400Β°F (200Β°C). Place an oven-safe wire rack on a rimmed baking sheet. Arrange dates seam-side down on the rack. Bake for 15–18 minutes.

Glaze and crisp

Brush lightly with maple syrup and broil on high for 2 minutes until bacon is deep reddish-brown and crispy. Let rest 5 minutes before serving.
