Ingredients
- 4 large eggs, separated
- 1 cup whole milk & 1 cup all-purpose flour
- 3 tbsp granulated sugar & 1 tsp vanilla extract & pinch of salt
- 3 tbsp unsalted butter (divided, for cooking and caramelizing)
- Powdered sugar and berry jam or plum compote for serving
Directions
Whip egg whites
In a clean bowl, beat egg whites with 1 tbsp sugar until stiff peaks form.
Make batter and fold
Whisk egg yolks, milk, remaining sugar, vanilla, and flour until smooth. Gently fold in whipped egg whites.
Cook, tear, and caramelize
Melt 2 tbsp butter in skillet. Pour batter; cook 5 mins until underside is golden. Flip, then use two forks to tear into bite-size pieces. Add 1 tbsp butter and 1 tbsp sugar; toss 3 mins until caramelized.
