A tribute to Austin's legendary breakfast taco culture: spicy Mexican pork chorizo browned until crispy, folded into soft scrambled eggs, and bundled into warm flour tortillas with melted cheese and avocado. Difficulty: Easy.
Ingredients
- 4 small flour tortillas
- 1/2 lb Mexican pork or beef chorizo
- 4 large eggs, beaten
- 1/2 cup shredded Monterey Jack or cheddar
- 1 avocado, sliced & salsa verde & fresh cilantro
Directions
Brown chorizo and add eggs
Brown chorizo in skillet for 6 mins until crispy. Pour in beaten eggs; scramble together over medium-low heat until soft.
Warm tortillas and assemble
Char tortillas over open flame or in dry skillet. Fill with chorizo eggs, cheese, avocado, and salsa.
