Stone Fruit, Tomato and Cucumber Salad
Cherries and cucumbers? Peaches and chile peppers? Celery with fruit? The answer is yes, yes, and yes! The key is to dice them on the smaller side and about the same size. Each and every bite is an explosion of summer's brightest flavors.
Ingredients
- 2 ripe peaches or nectarines, diced
- 1 cup sweet cherries, pitted and halved
- 1 cup cherry tomatoes, diced
- 1 English cucumber, diced
- 2 tbsp olive oil & juice of 1 lime
- 1 small jalapeno, seeded and minced & fresh basil
Directions
Dice evenly
Dice peaches, cherries, tomatoes, and cucumbers into uniform bite-sized pieces.
Toss and serve
Whisk olive oil, lime juice, jalapeno, and salt. Toss over fruit and garnish with torn basil.
