Ingredients

  • 2 jars (6 oz each) marinated artichoke hearts (oil reserved)
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 large eggs, beaten
  • 1/4 cup fine Italian breadcrumbs
  • 1 1/2 cups sharp white cheddar cheese, shredded
  • 1/2 cup Parmigiano-Reggiano, freshly grated
  • 2 tbsp fresh chopped parsley
  • 1/4 tsp dried oregano & pinch of red pepper flakes
  • Salt and black pepper to taste

Preheat oven to 325Β°F (165Β°C). Grease an 8 or 9-inch pie dish. Drain oil from one jar of artichokes into a skillet. SautΓ© chopped onion and garlic over medium heat for 5 minutes until soft. Chop the drained artichokes.

Whisk Custard Base

In a large bowl, whisk beaten eggs, breadcrumbs, parsley, oregano, salt, and pepper. Stir in shredded cheddar, Parmesan, cooked onion mixture, and chopped artichokes.

Bake until Set & Golden

Pour into prepared pie dish. Bake at 325Β°F for 35 to 40 minutes until center is firm and edges are golden brown. Let cool 10 minutes before slicing into wedges.
