Sicilian Potato Salad
You might not find this exact recipe over in Sicily, but similar iterations are common in both Sicily and mainland Italy. Potatoes, green beans, and tomatoes are a timeless Italian pairing in the summer months. Using buttery Sicilian green olivesβI love Castelveltranosβplus an herb-y oregano vinaigrette gives this salad lots of island flair.
Ingredients
- 1 1/2 lbs red baby potatoes, boiled and halved
- 1/2 lb green beans, trimmed and blanched
- 1 cup cherry tomatoes, halved
- 1/2 cup Castelvetrano green olives, pitted and halved
- 1/4 cup olive oil, 2 tbsp red wine vinegar, oregano, salt & pepper
Directions
Cook potatoes and beans
Boil potatoes until tender; blanch green beans for 2 mins.
Toss with dressing
Toss potatoes, green beans, tomatoes, and olives with olive oil, vinegar, oregano, and salt.
