Potato Chip Salad
The result is a salad I've made three times since, and will continue to make it all summer long. It's everything I want in a summer salad, and is excellent served with grilled fare like hot dogs, grilled chicken, and pulled pork. It'll blow everyone away at your next summer gathering or potluck.
Ingredients
- 1 large bag (8 oz) wavy or kettle-cooked potato chips
- 6 slices cooked thick-cut bacon, crumbled
- 1 cup sharp cheddar cheese, shredded
- 3 green onions, thinly sliced & 2 stalks celery, chopped
- 3/4 cup sour cream & 1/4 cup mayonnaise
- 1 tbsp dill pickle juice & 1/2 tsp garlic powder
Directions
Mix dressing
Whisk sour cream, mayonnaise, pickle juice, garlic powder, and black pepper.
Toss with chips
Combine chips, bacon, cheddar, and scallions in a bowl. Pour dressing and toss gently right before serving.
