Grilled Mexican Street Corn (Elotes)
When we are far away from the lively celebrations of his hometown, my husband and I can relive the fun by grilling corn and making our own version of Mexican street corn in just a few minutes. The charred kernels and the tangy sauce really make this different from your everyday corn on the cob.
Ingredients
- 4 ears sweet corn, husked
- 1/4 cup Mexican crema or mayonnaise
- 1/2 cup crumbled Cotija cheese
- 1 tsp ancho chili powder & chopped cilantro
- Lime wedges for squeezing
Directions
Grill corn
Grill corn directly over high heat for 10 minutes until blackened in spots.
Slather and coat
Slather hot corn with crema, roll in Cotija cheese, and dust with chili powder and cilantro.
