Grilled Skewered Meatballs (Soutzoukakia)
I love to grill meatballs. However, I do not love wrangling loose meatballs as I place, flip, and remove them from the grill. In this recipe, I deploy flat metal skewers to simplify the process. They are the ideal grill tool for these garlic and oregano-forward meat delights.
Ingredients
- 1 lb (450g) lean ground beef (85/15) or lamb
- 1 small yellow onion, grated
- 3 cloves garlic, minced
- 1/2 cup panko breadcrumbs
- 1 large egg
- 2 tbsp fresh chopped mint & parsley
- 1 tbsp dried Greek oregano & 1/2 tsp cumin
- 1 tsp salt & 1/2 tsp black pepper
- Tzatziki sauce, lemon wedges & grilled pitas for serving
Directions
Mix meatball base
In a bowl, combine ground meat, grated onion, garlic, breadcrumbs, egg, mint, parsley, oregano, cumin, salt, and pepper.
Shape on skewers
Thread meatballs onto flat metal skewers, pressing firmly.
Grill over high heat
Grill for 8-10 minutes, turning every 2-3 minutes until charred on all sides and cooked through (160Β°F internal).
