Dad's Easy Greek Salad
This Greek salad is a favorite of my father's to make during the summer. We usually have plenty of tomatoes and cucumbers growing in the garden, and all you have to do is toss in some red onions, olives, bell pepper, feta cheese, a few herbs, and some olive oil and vinegar and you have beautiful, cooling, fresh, Greek salad.
Ingredients
- 4 medium ripe tomatoes, cut in wedges
- 1 English cucumber, sliced
- 1/2 red onion, sliced thin
- 1/2 cup Kalamata olives
- 6 oz Greek feta cheese block
- 3 tbsp extra virgin olive oil & 1 tbsp red wine vinegar
- 1 tsp dried oregano & sea salt
Directions
Toss vegetables
In a shallow bowl, combine tomatoes, cucumbers, red onion, bell pepper, and olives.
Top with feta and olive oil
Crown with feta slab, drizzle olive oil and vinegar, sprinkle dried oregano and salt.

This has completely replaced my normal avocado toast! The beans blend so well you cannot even tell, and I stay full until lunchtime!
Great trick for adding protein without cooking eggs on busy mornings. Added a pinch of red pepper flakes and lemon zestβdelicious.
