Ingredients

  • 1/2 small head green cabbage, finely shredded
  • 1/2 small head red cabbage, finely shredded
  • 2 large carrots, peeled and julienned
  • 1/2 cup quality mayonnaise
  • 1/4 cup Greek whole milk yogurt
  • 2 tbsp sweet mango chutney
  • 1 1/2 tbsp mild curry powder
  • 1 tbsp fresh lemon juice
  • 1/3 cup golden raisins or dried apricots, chopped
  • 1/3 cup toasted sliced almonds & fresh cilantro for garnish

Whisk the coronation curry dressing

In a mixing bowl, whisk mayonnaise, Greek yogurt, mango chutney, mild curry powder, lemon juice, salt, and black pepper until silky smooth.

Toss cabbage and fruits

In a large salad bowl, combine shredded green and red cabbage, carrots, and golden raisins. Pour the dressing over top and toss vigorously until well coated.

Chill for 15 minutes to let flavors meld. Scatter toasted sliced almonds and fresh cilantro over top just before serving.
