When your garden or farmers market is overflowing with zucchini, this comforting southern casserole layered with cheddar cheese, sweet onions, and a crunchy Ritz cracker topping turns green squash into a dinner hero.
Ingredients
- 2 lbs zucchini and yellow squash, sliced into 1/4-inch coins
- 1 small yellow onion, chopped
- 1 1/2 cups sharp cheddar cheese, shredded
- 2 large eggs beaten with 1/3 cup milk
- 1 sleeve Ritz crackers, crushed with 2 tbsp melted butter
Directions
Steam squash
Par-cook sliced zucchini and onions in boiling water for 3 mins; drain thoroughly in colander.
Layer and bake
