Ingredients

  • 2 1/2 lbs boneless center-cut pork loin roast
  • 3 Honeycrisp or Granny Smith apples, wedged
  • 4 shallots, halved
  • 1 cup apple cider & 1/2 cup chicken broth
  • 2 sprigs fresh rosemary & 2 tbsp Dijon mustard

Sear pork loin

Season pork with salt and pepper; brown on all sides in an oven-safe Dutch oven for 8 mins.

Add apples and roast

Tuck apples and shallots around the pork. Pour cider and broth; brush pork with mustard. Roast at 375Β°F (190Β°C) for 50 mins until pork reaches 145Β°F.
