Ingredients

  • 1 lb sweet or spicy Italian sausage, casings removed
  • 12 oz dry rigatoni or penne pasta
  • 4 cups chicken broth & 3/4 cup heavy cream
  • 3 cloves garlic, minced & 1/2 cup sun-dried tomatoes, sliced
  • 3 cups fresh baby spinach & 3/4 cup freshly grated Parmesan

Directions

Brown sausage and garlic

In a Dutch oven, brown sausage for 7 mins, breaking into bite-size pieces. Add garlic for 1 min.

Simmer pasta directly in broth

Add broth, cream, pasta, and sun-dried tomatoes. Bring to a simmer, cover, and cook 15 mins until pasta is al dente.

Fold in spinach and cheese

Stir in baby spinach and Parmesan cheese until melted and silky.
