Ingredients
- 2 cans (15 oz each) cannellini or Great Northern beans, rinsed
- 1 1/2 cups sweet corn (fresh or frozen)
- 1/3 cup sour cream or Mexican crema
- 1/2 cup crumbled Cotija or queso fresco
- 1 tsp chili powder, juice of 1 lime & fresh cilantro
Directions
Char corn in skillet
Sear corn in a dry hot skillet for 4 mins until blackened in spots.
Warm beans with crema
Stir in beans, crema, chili powder, and lime juice. Heat 4 mins. Top with cotija cheese and cilantro.
