  • 1 1/2 cups sweet corn (fresh or frozen)
  • 1/3 cup sour cream or Mexican crema
  • 1/2 cup crumbled Cotija or queso fresco
  • 1 tsp chili powder, juice of 1 lime & fresh cilantro
