Everything you love about French onion soupβsweet slow-cooked onions, thyme, rich beef broth reduction, and gooey melted Swiss and GruyΓ¨re cheeseβbaked right into a juicy weeknight meatloaf.
Ingredients
- 1 1/2 lbs ground beef (80/20) and 1/2 lb ground pork
- 2 large yellow onions, sliced thin and caramelized in butter
- 1 packet French onion soup mix or 2 tbsp beef bouillon
- 3/4 cup crushed butter crackers or panko
- 2 large eggs & 1/3 cup milk
- 1 cup shredded Gruyère or Swiss cheese
Directions
Caramelize onions
Cook onions in butter with a pinch of thyme for 15 minutes until sweet and deep golden.
Mix and shape loaf
Gently combine meats, half the caramelized onions, soup mix, crackers, eggs, and milk. Shape into a loaf on a baking sheet.
Bake with cheese topping
Bake at 375°F (190°C) for 40 mins. Top with remaining onions and Gruyère; bake 10 mins more until cheese bubbles.
