Ingredients
- 1 lb boneless chicken breast, cut into bite-size pieces
- 1 pack (9 oz) refrigerated three-cheese tortellini
- 1/2 cup sun-dried tomatoes in oil, sliced
- 3 cloves garlic, minced & 1 cup chicken broth
- 3/4 cup heavy cream & 2 cups fresh baby spinach & 1/2 cup Parmesan
Directions
Sear chicken
Sear chicken in olive oil with Italian seasoning for 6 mins until golden; set aside.
Simmer tortellini in sauce
SautΓ© garlic and sun-dried tomatoes. Add broth, cream, and tortellini. Simmer 4 mins until tortellini is tender.
Finish with chicken and greens
