Ingredients

  • 12 oz (340g) ruffled lasagna noodles, broken into 2 to 3-inch pieces
  • 1 lb (450g) mild Italian ground sausage or beef
  • 1 jar (24 oz) quality marinara sauce
  • 1 cup whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmigiano Reggiano
  • 1 large egg, lightly beaten
  • 2 tbsp fresh chopped basil & 1 tsp dried oregano
  • Kosher salt and black pepper

Boil Broken Noodles

Preheat oven to 425°F (220°C). Bring a large pot of salted water to a boil. Cook broken lasagna noodles for 8 minutes until al dente. Drain well.

Brown Sausage & Mix Ricotta

Brown sausage in a skillet over medium-high heat for 6 minutes; drain. In a bowl, whisk ricotta, egg, oregano, half the Parmesan, salt, and pepper.

Assemble on Sheet Pan

On a large rimmed baking sheet, toss drained noodles with marinara sauce and browned sausage. Dollop ricotta mixture all over the surface. Top with mozzarella and remaining Parmesan.

Bake until Crispy & Blistered

Bake at 425°F for 20 minutes, then broil on HIGH for 2-3 minutes until cheese is browned and edges of noodles are delightfully crunchy. Garnish with basil.
