  • 1 lb (450g) spaghetti or linguine
  • 3 tbsp kosher salt (for boiling the pasta water)
  • 8 oz (225g) mascarpone cheese, at room temperature

  • 1 large fresh lemon, zested and juiced (about 3 tbsp juice)
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp freshly cracked black pepper
  • 1/4 cup fresh basil leaves, gently torn

Bring a large pot of water to a rolling boil with 3 tablespoons of kosher salt. Cook spaghetti according to package directions until al dente (about 8-9 minutes). Do not drain into a colander!

This is hands-down the easiest pasta I've ever made. The lemon zest gives it such incredible aroma!
